Spinach & Tofu stuffed Pasta shells baked in Tomato Sauce
1 1/3 cup large pasta shells
1 small box of spinach leaves (1-2 heads)
1 block of firm tofu
3/4 tbsp Vegan Pesto Sauce
1 jar of your favourite tomato sauce
1.Cook the pasta until almost firm
2. In a food processor chop and loosely blend spinach, tofu and pesto sauce.
3. Line the bottom of a Pyrex dish with tomato sauce. Take a small spoon and fill each pasta shell with the spinach mix. Place pasta shells into the sauce (stuffing side up) and bake at 400 for 20-30 min.
