Smashed Potatoes

This is always an easy little indulgent side dish easy to prepare or a great snack.

Ingredients:

1 bag baby potatoes
1/2 cup tofu sour cream
Coconut oil
Chives
Salt & Pepper

1. Boil the baby potatoes until cooked. Then let them cool. Simply put each one on a plate and smash with the palm of your hand.

2. You can prepare these two ways; place them on a pan with some coconut oil and bake in an oven at 420 for 20 min (and 5 min on broil at the end) or place in a frying pan with coconut oil and cook on Medium - high heat until golden brown each side.

3. Place on a plate with salt and pepper, sour cream and chives.

Serve and Enjoy.

Great color on those potatoes. Are you seasoning with Himalayan Rock Salt? There is a Oriental Produce market on the corner of 34th and Victoria ( Tengs?) that sells Himalayan Rock salt in both chunks and granules for approximately $3.99/lbs. Can you please post a link for your recipes on Tofu Sour Cream? I sure could use an ingredient like that as a dairy substitute for "Folded in" applications. Thank You so much. I have a bounty of local (Richmond Farms) potatoes begging to be used or put back in the ground. They would work well for this recipe.
