Easy Potato Leek Soup

10 large yellow potatoes
1 large leek
4 tbsp vegan butter
5-6 cups vegetable broth
4 bay leaves


1. I like to peel potatoes the lazy way; I don't. Halve your potatoes and bring to a boil once they are cooked transfer into a large colander in the sink and run cold water over them. After a few minutes (while you grab the potato under cool running water) pop them out of their skin.

Gently chunk apart 1/2 the potato mix and set in a bowl. With the other 1/2 of the potatoes, throw them in a blender with as much of the vegetable broth as you can and lightly pulse until mostly liquid.

2. In a big pot throw in the butter and leeks. Cook for a few minutes until soft poor in potato and soup broth mix and chunked potatoes. Let it simmer for a bit.

*add salt and pepper to taste


Serve and enjoy.
