1L Butternut squash soup base
2-3 spoonfuls of shiro miso paste
3 bunches of Japanese somen noodles
1 bunch of spinach or watercress (preferably)
Spicy sesame oil
Black sesame seeds
1. Bring butternut squash soup base to a boil and blend in miso paste.
2. In a separate pot boil somen noodles.
3. Place the noodles in the butternut squash soup base and add the greens (spinach or watercress) allow a few minutes for the greens to soften up. Top with the garnishings; spicy sesame oil, black sesame seeds, chili threads and green onions.
